Want a muffin but not a strawberry lover? The best part of this muffin recipe is that you can replace strawberries with your choice of fruit, I suggest try adding blueberries, diced apples, or do a medley of berries!
What You’ll Need:

- 1¾ cup All-Purpose Flour
- ½ cup Sugar
- 2 teaspoon Baking Powder
- ½ teaspoon Salt
- ½ teaspoon Cinnamon
- 1 Egg
- ¼ cup Canola Oil
- ½ cup Milk
- 1 cup Diced Strawberries
- 2 Bowls
- Muffin tin and/or 8 muffin cups (either paper liners or silicone cups)
Instructions:
Preheat oven to 375F/190C
Oil an 8 cup muffin tin or paper liners (Optional if using silicone cups)
In Bowl 1 (wet ingredients), combine egg, canola oil, and milk. Beat lightly
In Bowl 2 (dry ingredients), mix flour, sugar, baking powder, salt, and cinnamon
Toss in chopped strawberries and stir to coat with Bowl 2
Pour Bowl 1 mixture into Bowl 2 and stir together
Fill muffin cups (What I used: Lined silicone cups into muffin tin)
Bake at 375F/190C for 25 minutes or until the muffin tops bounces back from the touch
Cool for 10 minutes and remove from pan
