A round blue tin box. That can only mean one thing – Butter Cookies! Your excitement goes through the roof but only to have them collapse when you see a bunch of sewing supplies. Now, sewing supplies are great to fix a button or two but butter cookies are better!
There is no need to be disappointed ever again. These homemade butter cookies are not only easy to bake (and with just a few ingredients), they will taste just like the ones from the iconic blue tin – only fresher, maybe better, and completely personalized!
Ingredients:
- 1 cup All Purpose Flour
- 3/4 cup Cold Butter (cut into small cubes)
- 1/2 cup Powdered Sugar
- 1/4 tsp Salt
- 2 Egg Yolks
- 1 tsp Vanilla Extract
Instructions:
Preheat oven to 325F/165C and line 2 baking sheets with parchment paper, set aside
In a bowl or food processor, mix together flour, butter, powdered sugar and salt until mixture resembles breadcrumbs
Add in egg yolks and vanilla extract and mix until it forms a dough
OPTION 1: Using an ice cream/cookie scoop, scoop out the dough, roll it into a ball and flatten slightly
OPTION 2: Roll the dough out and onto a floured surface and use a cookie cutter to cut out your cookies
OPTION 3: Keep Frozen – Form the dough into a cylinder, cover it with plastic wrap and place it into the freezer. When you’re ready to bake, take it out of the freezer, let it thaw for 5 minutes and slice about 1cm thick
Place onto a prepared baking sheet and bake for 10-15 minutes or until lightly golden brown. Keep an eye on them!
Remove and transfer cookies to a wire rack to cool
