Chocolate Covered Dates Stuffed Nut Butter 3 Ingredient Dessert Recipe

I am a huge fan of Reese Peanut Butter Cups. They are one of my guilty pleasures in the snack and dessert department. But there are times when I want a healthier option and that I can make at home. These chocolate covered dates stuffed nut butter are a quick and easy 3 ingredient dessert recipe that you can literally whip up in minutes!

Chocolate Covered Dates Stuffed Nut Butter 3 Ingredient Dessert Recipe

Ingredients:

  • Nut Butter (peanut, cashew, almond butter, etc)
  • Pitted Dates (Medjool, Deglet Noor, Halawy, etc)
  • Chocolate chips (white, milk, dark, semi-sweet)
  • Kosher salt (optional)

Measurements aren’t included, as it varies. In this recipe, I used 10 Deglet Noor Dates and 1/4 Cup of Semi-Sweet Chocolate Chips.

Instructions:

Have a plate ready lined with parchment paper.

Open up a Pitted Date and using a spreader, fill Nut Butter inside the Pitted Date. Close the Date and scrape off any Nut Butter that is peaking out. Place it onto the plate. Repeat process until you’re out of Dates. And then chill the Stuffed Dates into the fridge.

Tempering the chocolate:

Option 1: Place Chocolate Chips into a microwave-safe bowl and microwave in 10 seconds increments – stirring chocolate each time, until chocolate is melted.

Option 2: Using the double-boiler method. Fill a pot with 1/4 full with water and bring to a boil then reduce to a simmer. Fit a bowl with the chocolate chips onto the pot (making sure the bowl doesn’t reach the water). Stir the chocolate until it’s melted.

Remove the chill Stuffed Dates from the fridge and one at a time, dunk Stuffed Dates into the melted chocolate – making sure the entire Date is coated. Transfer it back onto the plate and repeat until complete.

Optional: Sprinkle Kosher Salt on top of the chocolate immediately after it is on the plate.

Let it chill in the fridge before serving.
