A long day calls for quick and easy dinner. One of my go-to recipes? Spaghettini with Fresh Tomato Marinara.
This simple yet delicious recipe takes less than 15 minutes to make and eyeballing is key! Because let’s face it, no one has time to measure ingredients (BUT for the sake of this post, I’ll add the approximate amount).
Ingredients (2 servings):
- 1-2 cups Cherry Tomatoes, halved
- 2-3 Cloves of Garlic, smashed
- 1-2 tbsp Extra Virgin Olive Oil
- 1/4 box Barilla Spaghettini
- Salt and Pepper to taste
Instructions:
Follow pasta cooking instructions on the packaging: In a large pot, bring water to a boil, add salt to taste, then add pasta to boiling water – don’t forget to stir occasionally!
While pasta is boiling, heat up a large skillet with extra virgin olive oil and garlic over medium heat and allow garlic to lightly golden, add in tomatoes and let it sit until tomatoes cook down to a sauce-like consistency, stirring occasionally.
When pasta is al dente (about 5 minutes), drain and add it back into the pot, pour sauce into the pot, sprinkle as much or as little ground black pepper, stir everything together and serve!
